The sushi rice is Hokkaido Nanatsuboshi rice, seasoned with Kamui salt from Funka Bay.

Two seas, two sea urchins — a tasting of the finest

A side-by-side tasting of Hokkaido kitamurasaki sea urchin at its summer peak and the exceptionally rare wild red sea urchin known as the “phantom Yura”.
The selected Hokkaido sea urchin is bright and refined, with a clean depth of flavour. The wild Yura red sea urchin, by contrast, is dense and pure, deep and creamy, melting on the tongue like light snow.

Kitamurasaki sea urchin is prized for its exceptional sweetness and clean richness. From Ogawa Shoten, the leading name in Hokkaido sea urchin, we take only the finest of the day’s catch.

Hyogo Prefecture — Kawakatsu red sea urchin

Never sold on the open market, Kawakatsu’s wild red sea urchin — the “phantom Yura” — is held to be the finest of all. Utterly clean, dense in flavour, melting like light snow, with a deep and creamy finish.
